Adobe has provided most of the information needed to understand the components and features of Acrobat on their website.

Adobe Acrobat Overview is the launchpoint for a discussion of all components of the Acrobat family of products.

There is an excellent article written by Digital Constructs titled Acrobat Interactive: Why PDF. This article discusses what Acrobat is and its pros and cons for organizations that want to go beyond paper documents.
